How/why does sucrose(table sugar) react with stainless steel metal?
I am doing a science fair project and need so more information on why sucrose and stainless steel metal react with each other. I mixed 3 cups of sucrose with 1 cup of water. Then, I placed a stainless steel clip inside the glass cup with the mixture. I noticed that crystals started to form on the sides. But why do they do so? Is it because of the chemical compound of the sucrose? Please help. 
The crystals are sucrose crystals. The metal surface is providing nucleation sites, where crystal growth can occur. In a sense, the metal is acting as a catalyst for the crystallization of your sucrose.
